Shuicheng Luoguo(水城烙锅)

Shuicheng Luoguo, a famous snack in the west, is a specialty of Shuicheng County, Liupanshui City, Guizhou Province. Features: spicy and refreshing, delicious taste, appetizer, oil is not greasy.

Shuicheng Luoguo(水城烙锅) and pans began in the Qing Dynasty and has a history of more than 300 years.

According to legend, Wu Sangui, king of Pingxi, deployed troops to suppress the chieftain of the Yi nationality in Shuixi. When he arrived in Shuixi, there was a shortage of food and food, so the officers and soldiers had to put porcelain earthen altars of roof tiles and pickled cellar food on the fire, and put the hunted game and picked wild vegetables on it to satisfy their hunger.

It was this helpless act at that time that created this delicious dish today.

Probably by the end of the Qing Dynasty, the concave tiles or porcelain clay jars that were originally used without edges were gradually transformed into black sand pots with convex middle edges, which had a high edge in the middle and low edges, allowing excess oil to flow to the edge of the pot automatically. and it can be poured on the raw material at any time.

During this period, the raw materials on the basis of game and wild vegetables, increased the local specialty tofu and stinky tofu, and dipped in the five-spice chili noodle plate when eating.

After the reform and opening up, Shuicheng Luoguo(水城烙锅) appeared in the streets of Shuicheng in the form of stalls.

Later, people changed the convex black casserole into a flat-bottomed pig iron pot with edges, and heated it on top of the gas stove.

After 1992, Shuicheng Luoguo(水城烙锅) moved into the store for the first time, and soon formed a Shuicheng Luoguo(水城烙锅) street.

By this time, all kinds of meat ingredients, such as seafood, livestock, chicken, duck, cattle and sheep, and wild vegetables, have been put into the pot, and the dipping plate is much more than the original single five-spicy chili noodle plate, such as hot and spicy ear root dipped in water, braised green pepper dipped in water, and so on.

Shuicheng mutton powder(水城羊肉粉)

Shuicheng mutton powder is a folk snack in Liupanshui City, Guizhou Province, and it is the staple food for breakfast in Liupanshui people today.

Shuicheng mutton powder originated in the early 1980s. In the early days, Shuicheng people seldom ate mutton. Sheep were generally used as folk sacrifices. People did not eat mutton because they could not get used to the smell of mutton.

Throughout Guizhou, Shuicheng mutton powder has become a very famous food.

Mutton powder is cheap and suitable for ordinary people to consume, so we can often see shops with mutton powder in Shuicheng as a sign in many places that are not Shuicheng, such as Guiyang, Anshun and so on.

Although it looks like a bowl of simple powder, if it is not done well, the taste will be very different.

Shuicheng mutton powder does not put shallots, but in many places, Shuicheng mutton powder is filled with shallots, so it is not authentic.

Shuicheng is a very cold place, known as "Liangdu", so there are a lot of chili peppers in mutton powder. After eating this bowl of powder, you will sweat and get hot, so you can eat mutton powder. Moreover, chili peppers are all oiled chili peppers.

While eating mutton powder in Shuicheng, we often hear that so-and-so's chili is not delicious, the key to mutton powder, in fact, soup is one, the second is this will grab the taste of chili.

Chili peppers do well, complement each other, do not do well, can only make people feel either too spicy or tasteless, in short, this should be avoided.
